Mac and Cheese, but not from the cardboard box! This riff on a classic includes pumpkin for some added flavor. This dish has the addition of Glucerna®, which has been specially formulated for those with diabetes or impaired glucose tolerance. So dish up this family favorite next time you are craving some cheesy goodness!

Serves: 10

Ingredients:

  • 1 cup of Glucerna® powder

  • 500 g pumpkin, diced

  • 80 g butter

  • 3 cups grated tasty cheese

  • 1.25 L full cream milk

  • 150 g grated Parmesan cheese

  • 150 g flour

Method:

  1. Preheat the oven to 200°C.

  2. Bake pumpkin for 15 minutes or until soft.

  3. Cook macaroni in boiling water according to pack directions and drain well.

  4. Place milk, butter and flour in a small saucepan. Whisk over medium heat until smooth and until sauce boils. Simmer on low heat for a further 1 minute.

  5. Remove from heat and whisk in 2/3 grated tasty cheese (leave remaining cheese for topping) and Glucerna® powder. Combine with macaroni and pour into an ovenproof dish. Sprinkle the remaining grated cheese and Parmesan cheese.

  6. Bake for 20 minutes, or until lightly browned.

  7. Serve with salad
