Ingredients

  • 1 serve of PediaSure® (Vanilla Flavour)
  • 1 1/2 cups homemade chicken stock
  • 200g fresh button mushrooms
  • 100g fresh shiitake mushrooms
  • 80g fresh oyster mushrooms
  • 1 tbsp butter
  • 3 tbsp oats
  • Pinch of salt and ground black pepper
  • Some parsley

Method

  1. Bring stock to the boil in a pot.
  2. Add mushrooms and butter.
  3. Cook for approximately 10 minutes, and then remove a few mushrooms for garnish, if desired. Keep stock on boil.
  4. In a separate bowl, mix oats with PediaSure®. Add gradually to boiling stock. Keep stirring.
  5. Using a hand-held blender, blend all ingredients in the pot until smooth.
  6. Stir well and ladle into serving bowls. Serve soup immediately, garnished with mushrooms and parsley, if desired.
